Dee - one of my favorite cake recipes is a banana cake recipe out of the Better Homes and Gardens cookbook. this recipe is moist enough to hold up well for cupcakes and very simple to make. I top it with a vanilla buttercream icing but really, is good enough to eat unfrosted. 2 cups all purpose flour 1 1/2 cups sugar 1 1/2 tsp baking powder 3/4 tsp baking soda 1/2 tsp salt 1 cup mashed ripe banana 1/2 cup buttermilk or sour milk 1/2 cup shortening (I use butter, the real stuff) 2 eggs 1 tsp vanilla combine 1st 5 ingredients add next five ingredients beat with electric mixer on low speed until combined, then beat on medium speed for 3 minutes Teri |
