Sounds delicious!!I often make a simple citrus vinaigrette for a spinach salad with orange segments, avocado, red onion, and toasted nuts. It might work for your salad. I usually make enough just for a largish salad that serves 4, so that it's fresh every time. You just whisk together the following:
2 Tbsp. mild citrus vinegar (I use Orange Muscat Champagne vinegar from Trader Joe's)
1-2 Tsp. honey
1 tsp. dijon mustard (optional)
2 Tbsp. Canola oil (you can also do half canola, half nut oil, such as walnut or hazelnut oil--yummy)
Salt & pepper to taste
