"Need a good salad dressing recipe"
 
   So, I'm reading Glitter Baby, and in one scene Fleur and her mother are eating a salad of watercress, shrimp and pineapple. And being that I can't read about food without immediately craving that food, I want to make the same salad, like now, or at the very least tomorrow.

So I've searched around a few food sites for a "pineapple shrimp salad" recipe but have come up dry.

What I really need is a good dressing recipe for such a salad as this. I'm thinking something limey or citrusy.

Anyone got any ideas?

   Sounds delicious!!

I often make a simple citrus vinaigrette for a spinach salad with orange segments, avocado, red onion, and toasted nuts. It might work for your salad. I usually make enough just for a largish salad that serves 4, so that it's fresh every time. You just whisk together the following:


2 Tbsp. mild citrus vinegar (I use Orange Muscat Champagne vinegar from Trader Joe's)
1-2 Tsp. honey
1 tsp. dijon mustard (optional)
2 Tbsp. Canola oil (you can also do half canola, half nut oil, such as walnut or hazelnut oil--yummy)
Salt & pepper to taste
