"Looking for a salad that would go with Alfredo"
 
   I was recently at a Wildtree Party(which was great) and bought their Alfredo Extraordinaire. I'd like to make it and add chicken breast and broccoli, now I need a salad to go with it. I'm allergic to onions and I'm so sick of my usual iceberg salads. So can anyone give me some new ideas. Dee

   I'm a big fan of field greens or the spring mix salad. I just usually throw in the usual: tomatoes and cucumber, marinated artichokes, olives, feta or goat cheese.

Other options are spinach with goat cheese, pecan or walnuts, tomatoes or strawberries

Caprese salad of basil, boccocini cheese, tomatoes, with balsamic dressing.

Instead of using iceberg, try romaine or red leaf lettuce, which tend to have more nutrients than iceberg.

   In the winter, I like to make a endives/walnuts/apple salad. That's the base. Then depending on what I have in the kitchen, I add some mushrooms, grapefruit (sounds weird but it's very good with endives !), avocado, hot goat cheese toasts... and a simple vinaigrette with apple cider vinegar, olive oil and wholegrain mustard.

I usually make a big bowl of it and eat it for lunch but it's also great as a side dish.

I wanted to make an endive salad this winter with a maple syrup vinaigrette, but the grocery store was missing most of the ingredients. So, I made a mixed greens and apple cider vinaigrette. It's mixed greens, dried cranberries, feta cheese and toasted almonds. The dressing is apple cider vinegar, olive oil, sesame seeds, maybe poppy seeds. I think mine did have onions, but you could totally take it out. It does. The recipe is below:

2 tablespoons sesame seeds
1/2 cup cider vinegar
1/3 cup sugar
1/2 cup olive oil
2 teaspoons minced onion
1/4 teaspoon paprika
1 tablespoon poppy seeds (optional)

It really was a crowd pleaser.

Mixed greens with any kind of light dressing would work with a meal like that.

I love a good caprese salad (tomato and mozzarella). Don't forget the basil. mmmmm

   I have been serving spinach salad a lot lately. I throw on some strawberries, sliced almonds and Honey-Dijon dressing. It goes with everything,in my opinion.

   These all sound great. Thanks, I come from a mid-west meat and potatoe family who's mom thought a salad was just iceberg lettuce and tomatoes! I never think about putting fruit in a salad. I really like it, just never think of it. Same with vinaigrette, I've never made one! I think it's time I learn don't you? lol,lol...Dee

I can't say I'll never buy a salad dressing again, but there are so many different kinds of vinaigrettes and they're all so easy. Plus, if you don't like it, it's cheap and you can toss it.

I've also made Jill Barnett's Eggless Caesar Dressing which was originally posted on this board. You can store it for a long time. However, the garlic taste does increase the longer it sits so I'd put less garlic in if you're going to eat it over a period of time and more if you're serving many and eating in one night.
