Oh, my goodness, my mother can make a turkey a zillion ways - none of them gourmet, but it does get rid of the leftovers. She'll do a turkey and gravy over rice (or toast). This was mostly done in the days money was tight. Turkey soup. She's not a cook so it was store-bought chicken broth, veggies, spices and turkey. Depending on what you had with it, you could do the Thanksgiving sandwich which is turkey, stuffing and cranberry sauce. That's my BIL's favorite. You can also make any recipe you normally make with chicken depending on the flavoring. Casseroles, pot pies. Tossed with a salad, in with pasta sauce. |
