"What to do with turkey-leftovers?"
 
   My husband and I cooked a turkey today, and it was very tasty. We filled it with rosmary, lemon and lots of garlic, and then poured a bottle of beer inside. (Experimental cooking!) I´m glad none of you turkey-experts saw me manhandling the poor bird trying to cut it up though!
What do you do with the leftovers? I thought of pies or maybe pastasauce. I would be glad for some suggestions.

Oh, my goodness, my mother can make a turkey a zillion ways - none of them gourmet, but it does get rid of the leftovers. She'll do a turkey and gravy over rice (or toast). This was mostly done in the days money was tight. Turkey soup. She's not a cook so it was store-bought chicken broth, veggies, spices and turkey. Depending on what you had with it, you could do the Thanksgiving sandwich which is turkey, stuffing and cranberry sauce. That's my BIL's favorite. You can also make any recipe you normally make with chicken depending on the flavoring. Casseroles, pot pies. Tossed with a salad, in with pasta sauce.

   we just have our son's family over when I make a turkey. he won't leave til it's gone. maybe 4 days.
