"Seppie Cook Off #2 - Pies"
 
   Okay ladies, it's time for our second annual Seppie Cook Off which Jewls has graciously allowed me to host this time! The theme of course is pies.
I’d like to set the date for Sunday August 29th which is two weeks from Sunday, but you can bake your pie anytime that is convenient for you. If you’d like to participate, send me the pictures of your completed pie and I’ll post them on the board on Monday the 30th.
If you haven’t already decided to do it, please consider giving it a try! The more people that participate, the more fun it will be! I know not all of us cook, but we aren’t expecting anything gourmet, so you should give it a try!!
So, what kind of pie should we bake? Hot or cold? Bake or no bake? Mary suggested a Coconut Lime Custard pie that sounds divine! But, not everyone likes coconut. Although this pie may change people’s mind about that. So send me your pie suggestions, and then I’ll post a poll on Friday and the results on Sunday August 15th.

   I love pie and am open to making any type of pie for the cook off!!

That being said, how about a pie made with a seasonal fruit? It may be different for U.S. vs. International Seppies, but to me, the best pies are those made with seasonal ingredients. Right now in the U.S. that might be peaches, plums, and/or blueberries. Maybe we could designate a couple of filling options for this cook off, instead of just one? I.E.-- a couple of seasonal fruits, or a hot or cold option?

I don't mean to make it complicated, just thinking out loud

   So two pie options then? That could work. Right now blueberries are season here, but I'm not sure what is in season on the other side of the globe. Citrus maybe? It's a thought.

   Being winter down here, there are few fruits to select from, well not without paying a fortune for the imported fruits.

I would love to try a pumpkin pie, or an apple pie with maybe some other fruits mixed in. Keylime pie or lemon merangue would be nice as well, I've not tried either of them before. Or a custard fruit flan cold type of pie

Also, I'd love to find a good recipe for the pastry, I know the type of pastry will depend on the typpe of pie we make.

basically, any pie.

I have a cold pie recipe that requires no baking at all and uses a graham cracker crust. It is called Cloud Nine Pie. It has sweetened condensed milk, cool whip, and cream cheese for the filling and then you top it with butter toasted pecans and coconut (coconut is optional) and then top that with caramel. Put it in the freezer and Voila! It is done!
The recipe makes two pies and I always make one with and one without the coconut because DH doesn't like it.

Yummy, Pies! I don't care for cakes, but pies I love! I can do a great Key Lime pie...yummy!

But...hopefully we will be leaving FL on the 25th of Aug to head to CT to celebrate our 40th Anniversary by attending the church we were married in...on the 29th! So no pie baking for me! I'll just have to look at all the wonderful photos of them.

Bake it ahead of time, that is what I would do.

I took it right off the bottle of Key Lime juice! The 'key' to key lime pie, is using REAL key lime juice! I am always sending a bottle or 2 to my son in TX as he can't get it there and NO way is he going to squeeze all those little key limes!

   A friend of mine makes that same pie. I can't remember the brand but it's a company that is based out of Key West and it's the only bottled Key lime juice I've ever seen. The pie she makes with that recipe is unbelievably good!

   I'm in. The dates good for me.

Only problem is, I have no idea what stuff like cool-whip and lime-aid are.
We don't have stuff like that down under, unless it's called something else...whipped cream? lime cordial?

   I'd like to make something I haven't made before, trying to cook / bake / make etc something completely new! sort of seeing the whole Cook Off thing as motivation to learn and step out of my comfort zone.

There is a website down here that sells US products, so if push comes to shove I may be able to buy a special ingrediant there.

   Lots of great ideas, here. Keep them coming. I'm personally leaning toward something with citrus fruit since that seems to have the broadest appeal. I'll be posting the poll soon.
Also, for those of you who are unable to do it on the weekend of the 28th but would like to participate, you can bake your pie and send me the picture and results anytime before the 28th and I'll gladly post it for you if you like.

   I'll try whatever type of pie is chosen, but I do like Dawn's idea of a lot of different types of pies.

If we go with seasonal fruit, I'd probably make either peach or strawberry.

   I am putting my vote in for the same recipe, and if we can't decide on a fruit - I am not an expert, but can we do same dough, different fruit?

I would just prefer it that we are united, that we do the same thing because then, we an acctualy talk about it, discus how it went and all talk about the same thing - I saw a seppie cook off as a joint adventure, and I loved the cake one!

   I agree with Ana. The whole idea is to see how everyone experiences the same recipe. I mean looking at everyone’s before, during, and after pics made it much more interesting. I loved that Jewls had to go out and buy brand-new set of bakeware for the cake challenge, and that April misread the recipe and put oil into her frosting giving her that ultra glazed look – I love that SEP saw all those pics of everyone around the world making the same exact thing during the same time period and then sharing those pics on her site and FB page. The whole challenge really does bring us together.


Again, I second Ana’s idea. Maybe doing one pie recipe that can be used using different fruits? I’d also prefer it if we could keep it affordable – now that I pay all of my own bills I posted a peach blackberry pie recipe on the Recipe Conference Room Page, under Iva’s pie recipe request, I use that same crust recipe for apple pie. I also recommend that if we do agree to doing similar pie recipes with different fruit that we also agree on the pie’s overall texture – meaning apple pie is very different from pumpkin pie. Whereas apple pie can be similar to blueberry pie – see the difference? Pumpkin involves pureeing the fruit, while apple and blueberry are whole, which lends to having the same texture.
