"Pies, Seppies and Bake Off #2?"

   Would anyone like to volunteer to coordinate the second Seppies Baking Event thingy? After reading Iva's post on her pie baking bonanza, I really want to try my hand at making and baking a pie!

Pie sounds like fun!

What needs to be done? Recipe selection first then setting the dates?

   Yep, that's basically it

First - see who wants to play this time around;
Then - decide on a recipe;
Finally - set a date.

   I'll do it if Micah doesn't want to do it. That way I know I'll actually do it on time and actually post the pictures too.

But pies involve a crust. I'll be a firm maybe. It depends on the recipe and the pie. I don't really like pie.

   I'm in. I always like to bake!

I've got a great recipe for "Lime in the Coconut Custard Pie" if anyone's interested. It uses frozen Limeade, Coconut and Coconut Milk in the custard.

   Sorry for the delay in getting this posted...been working 10-12 hr days.

Lime in the Coconut Custard Pie

1 (13.5 oz.) can coconut milk, regular (not light)
1 C. sweetened coconut flakes
4 eggs
1/2 c. frozen limeade, thawed
1/2 c. sugar
1/4. flour
1/2 tsp. coconut extract
1/4 tsp. salt
1 - 9 inch deep dish pie shell
Whipped cream for garnish

Preheat oven to 400°F. Adjust rack to lowest level for baking. Combine coconut milk, coconut flakes, eggs, limeade, sugar, flour, coconut extract and salt in a blender. Blend until mixed & pour into pie shell. Bake for 15 minutes. Reduce oven to 350°F and bake for 40-45 minutes or until set. Cool on rack for 1/2 hour and refrigerate until cold before cutting. If desired, serve garnished with sweetened whipped cream, lime peel curls, or sliced fruit of choice.

When I make this, I divide up the can of limeade & pkg it in 1/2 c. containers to store in the freezer for the next time. For the granish, I've used slices of fresh strawberries or kiwis with a bit of whipped cream on top of the pie.

If we use this one, I belive us internationals will need further instructions; I am guessing yours "one can" is not the same as ours; and in yor recipe, when does C stand for "can" and when for "cup"?

This might be self explenatory for you, but for me, who is going to have a lot of fun figuring out even how to freeze limonade, it's not!

   All the c. in the recipe are cups. As for the 13.5oz. can, that would convert to 400ml, but I don't know if that's a common sized metric volume for canned goods.

We don't have to use this recipe, I just posted it since Micah said that it sounded good & I thought she'd like to have the recipe.

I'm up for trying any kind of pie.

   I might even attempt to bake this one in my own oven. I may need a few test runs to work out what setting to have it on so that it doesn't come out looking like charcoal as most other things tend to do. I hate my oven.

   I'm not entering because I would--well--eat the pie, but I want pictures! I'm still working on making homemade pie crust. My favorite is a Martha Stewart Recipe but I still find rolling the dough out a huge challenge.
