"Pies, Seppies and Bake Off #2?"

Would anyone like to volunteer to coordinate the second Seppies Baking Event thingy? After reading Iva's post on her pie baking bonanza, I really want to try my hand at making and baking a pie! |

I'm in. I always like to bake! I've got a great recipe for "Lime in the Coconut Custard Pie" if anyone's interested. It uses frozen Limeade, Coconut and Coconut Milk in the custard. Mary from Central Illinois |

Sorry for the delay in getting this posted...been working 10-12 hr days. Lime in the Coconut Custard Pie 1 (13.5 oz.) can coconut milk, regular (not light) 1 C. sweetened coconut flakes 4 eggs 1/2 c. frozen limeade, thawed 1/2 c. sugar 1/4. flour 1/2 tsp. coconut extract 1/4 tsp. salt 1 - 9 inch deep dish pie shell Whipped cream for garnish Preheat oven to 400°F. Adjust rack to lowest level for baking. Combine coconut milk, coconut flakes, eggs, limeade, sugar, flour, coconut extract and salt in a blender. Blend until mixed & pour into pie shell. Bake for 15 minutes. Reduce oven to 350°F and bake for 40-45 minutes or until set. Cool on rack for 1/2 hour and refrigerate until cold before cutting. If desired, serve garnished with sweetened whipped cream, lime peel curls, or sliced fruit of choice. When I make this, I divide up the can of limeade & pkg it in 1/2 c. containers to store in the freezer for the next time. For the granish, I've used slices of fresh strawberries or kiwis with a bit of whipped cream on top of the pie. Mary from Central Illinois |

All the c. in the recipe are cups. As for the 13.5oz. can, that would convert to 400ml, but I don't know if that's a common sized metric volume for canned goods. We don't have to use this recipe, I just posted it since Micah said that it sounded good & I thought she'd like to have the recipe. I'm up for trying any kind of pie.  Mary from Central Illinois |
